I started this blog couple of years ago when the pandemic started. I wanted to do it for all the people and especially my kids and my grandkids to taste the old Macedonian traditional recipes, I love cooking and do watch my videos for more recipes.
Homemade Sausage made Macedonian way Domasni Makedonski kolbasi ! Let me tell you ! I made this sausage two weeks ago , I need it little time to put everything together and to post it , so I made it the way my mom used to make it With lots of love
Ingredients
3 pounds ground pork sausage
25 pounds boneless pork tenderloin
1 whole garlic for the seasoning
1 I brought from Macedonia dry red peppers
1 I added also salt
1pepper paprika crushed
1red peppers flakes
1/2 cup shredded cheese, like sharp cheddar or havarti
Pork: We smoked it in a 55 gallon barrel , the old fashion way , outside for 10+ hours and they came out delicious It’s not easy to make it ! But it’s worth it !
Notes
Make sure to perform a quick release when pork is done cooking. A natural release will overcook the beef, breaking it down to a stew-meat like texture. Choose a tender pork cut like flank steak. and Watch the video to see how it’s made.
