Traditional Macedonian sweet Easter bread Kozinjak


For this bread you need lots of love patience and time

Ingredients

  • This Is The Recipe I Used

    250 ml warm milk

    4 taps yeast

    250 g sugar

    4 tsp honey

    200 g yogurt

    Zest from one lemon and orange

    1 tsp mahlab

    4 egg yolks

    4 whole eggs

    1 tsp rum

    Pinch of salt

    1 kg flour and maybe 200 g extra if needed

    150 g unsalted butter

    150 g lard

    verything should be room temperature

  • For The Filling I Used

    Dry Raisins

    Turkish delight ( lokum )

    You can use any Jam or Nutella

  • Toping

    2 yolks mix with 2 tbs milk

    Pecans or Walnuts

    Almonds

    Activate the Yeast first

    Mix the milk with 1 tbsp sugar ,100 grams of flour and the yeast.

    Mix it well, and leave it in a warm place to double the size ,mix it again and let it rise again ,do this three times.

    Put it in a big bowl , And combine the yeast with everything else in it for the dough,

    except the butter and the lard.

    Start meeting with your hands for a long time like 30 min , and put it in the greased bowl ,cover it with plastic and leave it in a warm place for more than an hour make sure to double or triple the size.

    When it rises I knead it again ,and start adding the lard in the butter mixture keep kneading for a long time ,till the dough comes out nice and elastic !

    Put it in the bowl ,cover it ,and put it in a plastic Leave it in a warm place to double or triple the size.

    Start making your Kozinjak Start braiding it however you want it.

    Lead them rise Brush it or the egg yolk

    Add walnuts or pecans ,almonds and sugar

    Preheat your oven on 350° and bake them for 45 minutes ,depends on your stove , cover it after if they burned on the top.
